Tripotassium phosphate

Tripotassium phosphate (also called tertiary potassium phosphate) is a salt obtained from the complete neutralization of phosphoric acid with potassium. It appears as a white to slightly grayish, odorless, and granular powder or solid. One of its main properties is its very high water solubility. When dissolved in water, the solution reacts strongly alkaline (basic), and therefore has a high pH value. Furthermore, it is deliquescent (hygroscopic), which means it can easily attract and bind moisture from the surrounding air.

Application

Tripotassium phosphate is approved as the food additive E340 and serves as a source of potassium and phosphorus in industry.

  • Food Industry E340:

    • Acidity Regulator: It is used to stabilize the pH value of food products.

    • Emulsifying Salt: It is essential in the production of processed cheese, as it loosens the protein and creates a homogeneous, meltable mass.

    • Stabilizer: It prevents the separation of ingredients in products such as powdered milk, coffee creamer, whipped cream, and various beverages.

  • Fertilizer: It serves as a supplier of the important plant nutrients potassium and phosphorus, particularly in special multi-nutrient fertilizers where nitrogen is not desired.

  • Detergents: It was previously used in some cleaning agents and laundry powders to bind water hardness, but is now often replaced by more environmentally friendly alternatives.
