Sodium diphosphate
Sodium diphosphate (also called sodium pyrophosphate) is a colorless sodium salt of diphosphoric acid. It belongs to the class of diphosphates, which are approved as food additives in the European Union under the collective number E450, with sodium diphosphate specifically designated as E450c. The compound exists as a white, odorless solid and is sparingly soluble in water.
In the food industry, it serves as an emulsifier, stabilizer, acidity regulator, and leavening agent (e.g., in baking powder), as well as a so-called curing auxiliary to improve water retention in meat and sausage products. Outside of food production, sodium diphosphate is used in detergents and cleaning agents as a water softener due to its ability to form stable complexes. In biochemistry, diphosphates, like the closely related adenosine diphosphate, are fundamentally important for energy metabolism. Concerns regarding a potential contribution to osteoporosis or the triggering of ADHD due to high phosphate intake have not yet been conclusively proven scientifically.
