Sodium diacetate
Sodium diacetate is an acidic sodium salt of acetic acid and a combination of sodium acetate and acetic acid. It typically exists as a white, crystalline powder and has a characteristic, strong vinegar odor. Although it is a solid compound, it behaves like a mixture of sodium acetate and acetic acid, which explains its acid-regulating and preserving properties. It is very highly soluble in water. Unlike pure sodium acetate, the aqueous solution of sodium diacetate is weakly acidic and exhibits excellent buffer capacity. It is a stabilizing additive that is less volatile than pure acetic acid.
Sodium diacetate is primarily used as a preservative and acidity regulator in the food industry, where it carries the designation E 262 ii. One of its most important applications is the preservation of bread and bakery products, where it effectively inhibits the growth of rope (bacteria that spoil bread) and mold. It is also used to extend the shelf life of meat and sausage products. Furthermore, in animal nutrition, it serves as a feed preservative to control microbial contamination. In chemical analysis, it is used for the preparation of buffer solutions because it can stabilize the pH value of solutions.
