Sodium acetate
Sodium acetate is the sodium salt of acetic acid. It is an organic compound and usually exists as a colorless or white crystalline solid. The most common form is the trihydrate, which contains three molecules of water of crystallization. It is very highly soluble in water and has a characteristic vinegar-like odor. An aqueous solution of sodium acetate reacts slightly alkaline (basic) and possesses buffering properties, which means it can stabilize the pH value. The salt is hygroscopic, meaning it attracts moisture from the environment.
Sodium acetate finds diverse applications in the food industry, technology, and chemistry. In the food industry, it is used as an additive (E 262), primarily as an acidity regulator and preservative (e.g., in ketchup, bread, and preserved vegetables). In the textile industry, it is used for the neutralization of sulfuric acid waste. A particularly well-known technical application is its use in hand warmers, where it releases heat through an exothermic crystallization (heat-releasing process). In chemical analysis, it is used for the preparation of buffer solutions. Furthermore, it is employed as an odor neutralizer (e.g., in leather).
